Description:
A thick and creamy rice pudding dessert with the added texture and flavor of raisins and cinnamon.
Ingredients description
  • 3 cups whole milk
  • 1 1/4 cup water
  • 1 cup rice, short or medium grain (I like Arborio rice_
  • 2 cinnamon sticks
  • 1/4 teaspoon salt
  • 1 14 oz can sweetened condensed milk
  • 1/2 cup raisins, soaked in warm water to soften
  • 2 teaspoons vanilla
  • butter for topping *optional
Preparation
  1. Bring whole milk and water to a slow simmer in a large pot, overmedium/low heat.
  2. Stir in rice, add in cinnamon sticks and barelysimmer, uncovered, until rice is softened which should be about 20-30minutes. Stir occasionally.
  3. When rice is soft, remove cinnamon sticksand stir in condensed milk, vanilla, salt and raisins. Return to aslight simmer and cook for an additional 10-15 minutes or until most ofthe liquid is absorbed and rice has a pudding-like consistency.
  4. Servehot, topped with a sprinkle of cinnamon or butter. (tastes good cold, too!)
Notes
"this rice puddingwas yummy! all i would defientley recommend is instead of using theWHOLE can of sweetend condensed milk.... only use half. it was wayyyyto sugared out! but if you really really love super sweet puddings thenstick to the whole can of the sweetend condensed milk.... and lastlyleave the LID ON while letting the rice cook and soften! it cooks muchquicker that way and the rice feels much softer by absorbing the milk."
